My kind of breakfast. Quick, easy and yummy!
You will need arugula, tomatoes, hard boiled eggs & prosciutto.
Spray a small sauce pan with olive oil and have over medium heat. Place prosciutto in pan and cook until crispy (less then 5 minutes). Arrange the arugula, tomato, egg & prosciutto on your plate. Dress with extra virgin olive oil , season with salt & pepper.
