Eight Week Transformation Challenge

With enjoying all my favorite Italian foods while teaching cooking classes and traveling to Italy some extra pounds have found their way to my body. Damn it ! So this challenge will be perfect for me for my next travel to Italy in June.

I just cannot eat eggs every morning of the week. I don’t care how they are prepared and how beautifully plated. I can’t do it. So this morning is a chicken salad bowl. After the “Everest” work out this morning (it’s exactly what you think… climbing a freakin mountain and descending ) I was starving.

I had some left over chicken breast from a Vietnamese Cooking Class, I love the marinade. It’s always nice to switch things around and try new flavors.

Here is the marinade:

3 tablespoons soy sauce or Bragg’s Liquid Amino’s

3 tablespoons olive or avocado oil

1 tablespoon sesame oil

2 bulbs lemongrass thinly sliced

1 inch piece of ginger finely chopped

1 clove garlic minced

Let chicken marinate at least 30 minutes. A full day gives more flavor. I used chicken tenderloin pieces.

For the salad:

Mediterranean Crunch Chopped Salad from Costco (throw out the innner bag of ingredients. Use the the greens it’s a time saver)

Match stick : cucumbers, red peppers, radishes (don’t have the time to cut tiny match sticks…cut as you want. I like the crunch from these veggies)

Small handful of slivered almonds

Squeeze of lemon

Drizzle with avocado oil

Great also served with cauliflower fried rice. Stir fry peppers, onions & asparagus!!!
