One of my favorites. We served this last night on Margarita braised & glazed ribs with a grilled pineapple & mango salsa. Its also very good on grilled shrimp, salmon, chicken, pork tenderloin. Also try making it with whiskey instead of tequila.
Tequila Pineapple Glaze
2 tablespoons olive oil
4 cloves garlic
1 cup brown sugar
1 cup Tequila (or whiskey is really good 🙂 )
½ cup pineapple juice
½ cup ketchup
3 tablespoons fresh lemon juice
½ t. black pepper
Saute garlic in olive oil. Stir in remaining ingredients. Simmer over medium heat until thickened. About 20 minutes.
